GLUTEN FREE OAT ROLLS

Happy Mother's Day to all of you fearless, selfless and strong mother’s out there! We are all doing our best we can for our children! Remember that in all of the good or not so good, fun or not so fun and challenging moments we experience during motherhood! <3
I made oat rolls the other day, that were not only really delicious but also gluten free! I love cooking and baking and I thought it would be nice to occasionally share recipes, that our family finds tasty. We have some picky eaters, so it's not easy to find foods that everyone likes, but these oat rolls were a hit!
All you need is water, yeast, salt, syrup, butter and gluten free oat flour. I will share the recipe below.
Gluten free oat rolls:
9 dl Oat flour (Gluten free)
7 dl Water (Luke warm temperature for yeast activation)
1 bag (11g) Dry yeast or 30g of fresh yeast (I used dry yeast)
3 tsp Salt (I used Himalaya salt and honestly I will be using even more salt in my next batch!)
4 tbsp Syrup (I used Agave syrup) Syrup can be substituted with honey.
50 g Butter (Take out to room temperature at least 30 min before using. Butter has to be soft!)
Warm your water to luke warm temperature, add and mix in the dry yeast. Add your salt and syrup in to the water mix using a whisk. Then add your flour in little by little using a strainer. Use your whisk as long as you can before using your hands. After working the dough with your hands add your butter and work the dough some more.
TIP! You can mix seeds or dry berries in to your dough. My favourites are:
- Chia seeds. I think they are most suitable for this bread because of their mild and subtle taste.
My kids don't even notice them and they are packed with important nutrients like; omega 3, fibre, calcium, iron and antioxidants.
- Berry wise I would choose lingonberries over any other dry berry for this roll.
Clean your worktop and make sure it is dry, before spreading flour and setting your dough on the surface. Work your dough in to a thick roll and cut in to desired sized pieces. You can shape them as desired on to your baking tray. Cover your baking tray with a dish/tea towel and leave to rise for about 30-40 minutes.
If you want to decorate your rolls with oat flakes or sea salt, then sprinkle water on your rolls and then add flakes on top before placing them in the oven.
TIP FOR TASTINESS! If you prefer your rolls to have a crispy crust, then fill an extra baking tray or some other oven safe dish with boiling water and place it at the bottom of the oven.
